Shrimp with Squash in Coconut Milk

  1. 1/2 kg shrimp (deveined)
  2. 4 cloves garlic (minced)
  3. 1 medium onion (sliced)
  4. 1/4 yellow squash (chunks)
  5. 1/2 cup shredded cabbage
  6. 1 can coconut milk
  7. 1/2 cup water
  8. 2 tbsp. fish sauce
  9. 2 tbsp. olive oil (for sauté)

  1. In hot pan, sauté garlic and onion until caramelized.
  2. Add squash and cabbage. Cook for 5 minutes.
  3. Add water. Simmer until squash is slightly tender.
  4. Add coconut milk and fish sauce. Let it boil.
  5. Add shrimps; simmer for 15-20 minutes until all vegetables are cooked.

Serve HOT and Enjoy!
