Bagoong Rice (Jasmine Rice with Shrimp Paste)

* 1/4 kg pork belly, sliced
* 2 tbsp. oyster sauce
* 4 cups steamed rice (preferably Jasmine Rice)
* 3 tbsp. bagoong (shrimp paste)
* 1 teaspoon minced garlic
* 1 tbsp. olive oil
* Salt and pepper
Garnish: Grated Fresh Cucumber and Tomato

  1. Heat a frying pan.
  2. Sear the sliced pork belly (with oyster sauce and garlic) about 2-5 minutes or until fat comes out. Add 1 tbsp. shrimp paste; continue cooking for a minute. Remove then set aside.
  3. Pour oil into the same frying pan. Put in the rice. Add 2 tbsp. shrimp paste. Gently mix while cooking until all ingredients are properly distributed.
  4. Add the seared pork belly and continue mixing while gently scraping the bottom once in a while.
  5. Transfer in a serving bowl. Garnish with grated cucumber and fresh tomato.
Serve and enjoy!
